Yesterday was cold and grey, a perfect soup making sort of day. I just made chicken and rice last week, so I was looking for something new. I decided to go for something from my childhood and made Liver Dumpling Soup.
If you ate czech food as a child, like I did, you know this horrible sounding dish is really really tasty. If you think humans aren't supposed to eat offal, and that beef liver is best fed to catfish, you think like my husband.
This soup was really easy to make, and liver is disturbingly cheap ($1.30 a POUND?!). Since I am apparently eating this alone since husband refuses to even taste a dumpling, I will have plenty of soup for some time. This is a good thing, as iron helps us play.
